UglyDoll Cupcakes!

So basically UglyDolls are these awkwardly ugly monsters that look like I could've drawn them in Kindergarten, except they're awkwardly REALLY adorable and cute, so their plush stuffed animals are really over priced. Like, a 14 inch one is probably around $25. It's an urban thing I think... Anyways, I decided to decorate a bunch of cupcakes with their faces on them! Here goes:

so I made a Pikachu!


When I got really lazy, I did some suuuuuper plain hearts & flowers.

The cupcakes were my 'half scratch half box' cake recipe for devils food chocolate cake and red velvet cake.

Frosting was also homemade, just your basic egg whites, lemon juice, & powdered sugar recipe, plus food coloring for whatever colors I needed. I used the flooding technique for the colored icing and I used melted white chocolate to frame it. The eyes were upside down white chocolate chips and the mouths, eyes, and anything "black" was just melted down baking chocolate.


Victoria and I randomly decided to make cupcakes one night out of nowhere, so we went to Walmart at freakin 10pm after our PAPhi fundraiser at Guad's. We basically finished up with the baking at around midnight and didn't finish decorating until 4am. Anyways, 4am cupcakes were well worth it. It was a ton of fun, and I only had a quiz at 7:30 am the next day anyway so it didn't matter right?

...I didn't show up for class and ended up makign it up at another discussion section.

Overall, I loved it. UglyDolls + Cupcakes = UGLYCUPCAKES!

This was basically my first time attempting "fashionable" cupcakes. I think it turned out quite well. Piping was REALLY hard at first but then I got the hang of it and it's kind of fun actually! I think it gives the cupcakes something extra special. What's really hard is keeping them from breaking after they were solid... They're so freakin fragile! I broke so many martini glasses and "2009"s... Ahhhh. Well worth the effort though. Definite success for my first attempt at this style of decorating though.

Future Goal: Cake decorating class so I can learn to pipe!

Christmas Creations

Andes Mint Chocolate Cake

This cake is exactly what the name says it is. Chocolate cake with Andes mint. Suuuuuper moist... It had chopped up Andes mints bits in side of it and then garnished on top too. It was for a Secret Santa Potluck with my favorites on Drake Circle. I got silicone bake ware and a WALL-E plush from Will!



My Signature Cookies


For my secret santa receiver, I baked her 50 of my signature cookies that she loves so much...AND made a huge pillow replica of the cookies. Jo likes to call them "Tiffany's 'The Shit' Cookies".

Basically they're oatmeal-peanutbutter-darkchocolatechip-cookies. Yummy! Sounds like a lot, but son, its gooooood.

I also made my big bro at Pi Alpha Phi some pillows for Christmas... Yes, aside from baking and cooking, I love making pillows! As you saw from Jo's Signature Cookie pillow, food kinda runs as a theme. Here's the set I made:

This definitely took a couple days to make. Cutting out the letters was the most tedious part, but it definitely took a lot of brain power to think up how to make the sauce. I had to use a different kind of stuff to keep the structure looking "cube"ish. It's made from felt, two different kinds of stuffing, and a lot of hot glue.

The story behind this one? Trevor works at the Nugget Market and was ALWAYS working during Fall quarter so I barely ever got to see him. My retaliation? Make fun of him by making him a set of pillows of nuggets! Haha. He loved it. Also, I kind of felt bad that the pillow I made him during Crossing Night was super tiny compared to everyone else's pillows for their big bros.

They've definitely come in handy though. One time, I was studying with the big bro for midterms the next day and it was like, 3am. Freakin A I was sooo tired and didn't feel like driving back to South Davis, so I just crashed on the couch with a couple of those nuggets! WIN!

Can't wait to make more pillows. Don't know when the next opportunity will come up, but once a light bulb turns on in my head, it's pillow fight timeeee!

Black Bottom Cupcakes

Also known as "Black Bottom Muffins", "Chocolate Chip Cheesecake" Cupcakes, Cream Cheese Top Cupcakes, Black&Whites, the names continueee!

No frosting on these babies. They're sweet enough without it. It'd taste overwhelming.

The first time I ever made these, they came out AMAZINGLY and tasted like perfection. I have yet to duplicate the batch since then. It's soooo frustrating! Honestly, these were the first things I've EVER messed up, and I almost cried when I messed up the 2nd batch.

Chris, Robert, and Jo were all there when I freaked out. I think it was the first time I've ever failed and made something inedible.

I made a batch last week that turned out decent, but they weren't exactly like my first batch. It drives me nuts. I can't seem to remake them!

Chocolate Covered Strawberry Cupcakes

I decided to start off the blog with posts of stuff I've made in the past. Here goes:

I randomly made these one day last summer. Tianna and I were at Walmart and I suddenly had the urge to make strawberry cupcakes when I saw the strawberries in thr produce aisle. They looked a lot better than they tasted--my frosting wasn't too great.

Once Upon a Time...

I had a Xanga.

Yes, I've decided to blog again. I bounced back to Xanga a few times, but I feel like that's so high school. After days and days of procrastinating and NOT studying for finals, I think I've spent enough time on OTHER people's baking and cupcake blogs. I need my own.

If you've had the chance to try one of my cupcakes, I hope you enjoyed them. I'm looking to be more innovative this quarter, and get into trying out a lot of new stuff. Everyone seems to like the Facebook posts of my cooking, so I decided that I should have a totally separate site for my creations.

So, why the title?
I guess I've been known to be somewhat of a princess and a Disney fanatic. Half of my pictures up online are of me in some form Mickey ears. The title just fits. What makes me happy? Baking cupcakes, happily ever.

A blog of my baking adventures and discoveries. I could say it's less personal than my old xanga, but I'd be lying. Baking makes me feel good inside and it relieves my stress and anxieties. My answer to finals week last week: Tianna's birthday this week. Yeap. There's people that eat sweets to make themselves feel better during hard times...I make sweets to make myself feel better.
